Til Gul Ghya “Cold Cold” Bola: Til Gul Ice Cream by Icestasy

Trust us, Til Gul ice cream is your go-to dessert this season! The typical Makar Sankranti fare is getting a really cool twist. And by this we mean seriously cool. Icestasy, a Vile Parle-based manufacturer of some truly unusual ice creams, is offering a Til Gul ice cream this festive season.

We all know Makar Sankranti marks the end of winter and the onset of warmer times. So why not welcome it with this Til Gul ice cream? In its second successful year now, this flavour by Icestasy has wowed many dessert fans. And this is not just the Maharashtrian palate but well beyond that.

What’s this Til Gul ice-cream really like?

Here’s our opinion on the Til Gul ice cream by Icestasy – it’s a delicious frozen take on a traditional Indian sweet. The creamy texture is pleasantly intercepted by crunchy white sesame (til) seeds. Who’s the Icestasy team creating Til Gul ice cream?

We caught up with the team at Icestasy and quizzed them on their awesome ice creams. This includes Sanmish Marathe, a hotel management graduate who’s worked abroad extensively; Parag Chaphekar, an MBA graduate and Milind Salvi, a dairy technologist and consultant who’s worked with ice creams his entire career. All three are self-confessed foodies. Sounds like the perfect combination here!

‘We usually come up with different and unique flavours every festive season’, says Sanmish. This includes Til Gul flavour for Sankranti, Thandai for Holi, Puran Poli for Gudi Padwa and Moti Choor Ladoo for Diwali. Xmas saw Icestasy churn some special Xmas cake flavours too.

As for this particular one, the team guards their recipe and methods carefully! ‘What we do is basically deconstruct a dessert or a particular flavour’, shares Sanmish. In this case, the white sesame seeds are processed to retain some crunch, combined with jaggery in the way to create the Til Gul flavour.

How do I get Icestasy’s Til Gul ice cream?

Icestasy delivers their ice creams all over Mumbai – from Colaba to Kalyan. It has partnered with Swiggy for specific neighbourhoods.

Restaurant and ice-cream parlours across Mumbai – Aswaad in Dadar, Fill in The Blank at Mahim, Scoopalicious in Bandra – will serve this Sankranti special. You get your scoop sprinkled with some crushed Til Gul chikki or drizzled with some molten jaggery. Mouth-watering, isn’t it?

‘Strawberry ice cream comes up next week’, says Parag. As is with the other fresh fruit flavours, Icestasy does not use any frozen pulp, colour, essence or artificial flavours. All ice creams are made with freshly procured fruits, sourced and purchased by the enthusiastic team itself.

Come Holi, and you’ll want their Thandai ice cream for sure!

The Icestasy repertoire has 100 flavours. Apart from its own versions of customary flavours, there are some really unique ones.

We’re talking of the super-popular Caramel Cheese Popcorn (complete with a salty edge), Mango Chilli (ripened mango with a chilli twist), Black Sesame (try it and know!) and Cheddar Cheese. The last one was created on the request of master chef Ajay Chopra for a special gourmet menu he curated at a restaurant.

‘We regularly work with chefs and culinary experts, who want us to develop special flavours to complement their menus’, the Icestasy team mentions. The makers also work with speciality restaurants who like serving customised ice creams to patrons on a regular basis. They credit the Aswad team for their guidance on developing and perfecting the Puran Poli and Til Gul flavours, since the restaurant’s forte’ remains Maharashtrian cuisine.
